Ingredients
- 450 gms Mixed Lettuce
- 8 Slices fresh Pineapple (cut into cubes)
- 1 Green bell Pepper
- 1 Red Onion (thinly sliced)
- 200 gms Chicken breast
- 1/3 cup Dijon mustard
- ¼ cup Honey
- ¼ cup Mayonnaise
- 1 tbsp Lemon juice
- 1/4th tsp Cayenne pepper
- Sea salt
- Freshly ground pepper
Directions
- For the Honey mustard dressing : In a medium sized bowl combine the Dijon mustard, honey, mayonnaise, lemon juice & cayenne pepper and give it a nice whisk till all the ingredients come together.
- In a separate bowl marinade the chicken with the pineapple, peppers & 3 tbsp of the Honey mustard dressing. Cover the bowl and refrigerate for 30 mins.
- Remove the chicken from the marinade and grill the chicken, peppers and pineapples separately. (the peppers should still have a crunch)
- Arrange the mixed lettuce on a large platter, top with grilled chicken, pineapples, peppers, red onions, season with salt and pepper, add a couple of spoons of the honey mustard dressing & SERVE Immediately !
